Abstract:
Bu çalışma ile sağlık açısından pek çok faydası bulunan nar ve geleneksel bir ürünümüz olan lokumu birleştirilerek Şanlıurfa' ya özgü yeni bir ürün elde edilmesi ve üretilen üründe depolama süresinde meydana gelen değişimlerin incelenmesi düşünülmüştür. Böylece piyasaya yeni bir ürün kazandırılması amaçlanmıştır. Üretilen narlı lokumun 6 aylık depolama süresince yapılan duyusal ve objektif değerlendirmeler sonucunda piyasada kabul edilebilir bir ürün olacağı düşünülmektedir. In this study, it was thought that generating a new product which is special to Şanlıurfa by combining our traditional product Turkish delight with pomegranate which has a lot of benefits in terms of health and examinating changes in storage period of final product. In this way, it way planed to serve new product to market. After istrumental and sensory analysis in Turkish delight with pomegranate in the storage period of 6 months, it is estimated that our final new product could be acceptable in domestic market.
