Abstract:
Bu çalışmada, nar suyu konsantresi laboratuar tipi bir püskürtmeli kurutucuda kurutulmuştur. Kurutma haznesi ve siklon seperatördeki yapışma probleminin giderilmesi için kurutma yardımcı maddesi olarak DE 7 ve DE18 değerli maltodekstrin kullanılmıştır. Nar suyu tozunun kurutulabilmesi için farklı maltodekstrinler, hazırlanan karışımdaki maltodekstrin konsantrasyonları ve kurutma şartları belirlenmiştir. Kurutma yardımcı maddesi olarak DE7 maltodekstrin ve nar suyu konsantresi / maltodekstrin oranın da ?1 olması gerektiği tespit edilmiştir. Kurutmada; sıcak hava giriş ve çıkış sıcaklıkları sırasıyla 110?C, 78?C olarak, kurutmaya giren hammaddenin ÇKM değeri ise 40 briks olarak belirlenmiştir. Elde edilen tüm ürünlerin fiziksel ve duyusal özellikleri higroskopiklik dışında, kabul edilir seviyelerde bulunmuştur.
In this study, pomegranate juice powder was produced with a lab scale spray dryer. The problem of stickness in the drying chamder and cyclone was overcome through the use of DE7 and DE18 maltodextrins as drying aid agents. For each type of maltodextrin, the dryer operating conditions and the minimum concentration of maltodextrin in the feed, necessary for sucesful powder production, were determined. The maximum ratio of (pomegranate juice solids/maltodextrin solids) achieved was ?1 and was made possible with the use of DE7 maltodextrin. The inlet and outlet drying air temperatures were 110?C and 78?C, respectivelly, while the feed contained 40 brix total solids. The physical and sensory properties of all powders produced were determined and found to be satisfactory, the only exception being their high hygroscopicity.
