Abstract:
Çay, dünyada sudan sonra en çok tercih edilen içecektir. Yapılan bu araştırma ile insanlar tarafından fazla miktarda tüketilen siyah çayın bazı elementlerce ne durumda olduğunu ve insan sağlığına olası etkilerinin neler olabileceğinin ortaya konulması amaçlanmıştır. Araştırma bu bakımdan önemlidir. Bu çalışmada materyal olarak Şanlıurfa il merkezinde ki piyasalarda satılan ve farklı satış noktalarından toplanmış 13 adet ithal, 2 adet Rize çayı olmak üzere toplamda 15 farklı çay örneği kullanılmıştır. Çay örneklerinin ağır metal ( Al, Cd, Co, Cr, Cu, Fe, Ni, Mn, Pb, Zn) içeriği „Kuru Yakma Yöntemi‟ uygulanarak ICP-OES ile saptanmıştır. Yapılan analiz 3 tekrarlı olarak gerçekleştirilmiş olup, elde edilen verilerin ortalamaları alınmıştır. Bu ortalama değerlere göre siyah çay örneklerinin, Al içeriği 403.3-1307.5, Cu içeriği 7.73-16.88, Cr içeriği 0.72-3.86, Fe içeriği 54.89-142.9, Mn içeriği 219.5-655, Co içeriği 0.03-0.16, Ni içeriği 4.06-1.35, Pb içeriği ise 4.02-12.66 aralığında saptanmıştır. Araştırma sonucunda, çay örneklerindeki Pb içeriği 1 ve 12 nolu örneklerde, verilen sınır değerini aştığı, kalan diğer örneklerin Pb içeriğinin verilen sınır değerininin altında olduğu saptanmıştır. Cu içeriğinin ise, 8 ve 11 nolu örnekler hariç, bildirilen sınır değerlerden daha yüksek seviyede olduğu saptanmıştır.
Tea is the most preferred drink in the world after water. The aim of this research is to determine the situation of black tea which is consumed in large quantities by people and the possible effects on human health. Research is important in this respect. In this study, a total of 15 different tea samples were used, 13 of which were imported from different sales points and 2 of which were collected from Rize. The content of heavy metal (Al, Cd, Co, Cr, Cu, Fe, Ni, Mn, Pb, Zn) of tea samples was determined by ICP-OES using with Dry Burning Method. The analyzes were performed with 3 repetitions. The averages of the obtained data were taken. According to these mean values, the Al content of black tea samples were determined as 403.3-1307.5, Cu content 7.73-16.88, Cr content 0.72-3.86, Fe content 54.89-142.9, Mn content 219.5-655, Co content 0.03-0.16, Ni content 4.06-1.35, Pb content 4.02-12.66. As a result of the study, it was determined that the Pb content in the tea samples exceeded the limit valmes in samples 1 and 12 while the Pb content of remaining samples were below the given limit values. Cu content was found to be higher than the reported limit values except for examples 8 and 11.
