Abstract:
Bu çalışmada; Şanlıurfa koşullarında yetiştiriciliği yapılan üç üzüm çeşidinin kurutulmasında, farklı kurutma yeri (güneş, gölge ve etüv) ve potasa konsantrasyonlarının (kontrol, %2,5 , %5 ve %7,5) etkisi araştırılmıştır. Gölgede kurutmanın güneşte ve etüvde kurutmaya göre çok daha uzun sürdüğü ayrıca bazı kalite kriterlerini olumsuz etkilediği saptanmıştır. Potasa uygulamaları arasında kurutma süresi bakımından farklılık tespit edilmemiştir. Kurutmaya alınan çeşitlerden Horoz Karası; diğer çeşitlere göre daha uzun sürede kurumuştur. Kurutulmuş üzümlerde en düşük nem içeriği etüvde kurutma ile elde edilmiştir. Ayrıca etüvde kurutulan üzümlerin tane ağırlıkları da diğer kurutma yerlerine göre düşük bulunmuştur. Kuru üzümün tane boyu üzerine kurutma yerinin etkisi olduğu; güneşte kurutulan örneklerin daha kısa, etüvde kurutulanların ise daha uzun olduğu saptanmıştır. Kuru üzüm üretiminde en önemli kriterlerden biri olan randımanı çeşit, kurutma yeri ve potasa uygulamaları etkilememiştir. Çalışmada incelenen çeşitlerden Horoz Karası ve Hatun Parmağının bazı çekirdek özelliklerinin kurutma yeri ve potasa konsantrasyonlarından etkilendiği saptanmıştır. Kurutma yeri ve potasa konsantrasyonlarının, kurutulmuş üzümlerin sınıfına tek başına etki etmedikleri de çalışmada ortaya çıkarılmıştır.
In this study; the effect of different drying sites (sun, shade and drying oven) and potassium carbonate concentrations (control, 2.5%, 5%, and 7.5%) was investigated in the drying of three grape varieties cultivated in Şanlıurfa conditions. It was found that drying in the shade lasted much longer than drying in the sun and in the oven and also negatively affected some quality criteria. There were no differences found in drying time between potassium carbonate applications. Horoz Karası was dried longer than other varieties. The lowest moisture content of dried grapes was obtained by drying in the oven. In addition, the berry weight of the grapes dried in the oven was also lower than the other drying places. The effect of drying on the berry size of the raisins; the sun-dried samples were found to be shorter and the ones dried in the oven were longer. Raisin yield, which is one of the most important criteria in the production of raisins, was not affected by drying places and potassium carbonate concentrations. It was determined that some of the seed characteristics of Horoz Karası and Hatun Parmağı were affected by drying places and potassium carbonate concentrations. The study also showed that drying places and potassium carbonate concentrations do not affect the class of raisins by themselves.
