Abstract:
Bu çalışmada, nar çekirdeği ve nar kabuğu tozunun probiyotik yoğurtlarda prebiyotik olarak kullanım olanakları araştırılmıştır. Bu amaçla probiyotik yoğurtlara nar çekirdeği ve nar kabuğu tozu ilave edilmiş ve probiyotik yoğurtların fizikokimyasal, duyusal ve mikrobiyolojik özellikleri araştırılmıştır. Çalışmada prebiyotik etkisi bilinen inülin de kontrol amaçlı olarak yoğurtlara ilave edilerek 4 farklı probiyotik yoğurt (A: kontrol, B:%2 inülin ilaveli, C:%1 nar kabuğu tozu ilaveli ve D:%1 nar çekirdeği ilaveli) üretilmiş ve 4±1°C' de 20 gün süreyle depolanmıştır. Probiyotik yoğurtlarda depolamanın 1., 10. ve 20. günlerinde yoğurtlarda fizikokimyasal, mikrobiyolojik ve duyusal analizler yapılmıştır. Elde edilen sonuçlara göre yoğurt örneklerine ilave edilen prebiyotiklerin titrasyon asitliği, serum ayrılması, viskozite, tat-koku, yapı-tekstür ve genel kabul edilebilirlik puanları ile Lactobacillus acidophilus ve Bifidobacterium animals subsp. lactis (BB-12) sayıları üzerine etkisi önemli (p<0.05), pH değerleri ve renk-görünüş puanları üzerine etkisi ise önemli bulunmamıştır (p>0.05). Mikrobiyolojik analiz sonuçları, örneklere ilave edilen nar kabuğu tozu ve nar çekirdeği tozunun prebiyotik etkisinin inülin ile kıyaslandığında daha düşük olduğunu göstermiştir.
In this study, the properties of usage pomegranate seed and pomegranate peel powder as a prebiotic in the prodcution of probiotic yoghurts were investigated. For this purpose pomegranate seed and pomegranate peel powders were added into probiotic yoghurts and physicochemical, sensory and microbiological properties of yoghurt were investigated. In the study, inulin of which prebiotic effect was known, were also added into yoghurt as second control and thus four different yoghurt were produced (A:control, B:2% inulin added, C:1% pomegranate peel powder added, D:1% pomegranate seed added yoghurts). The samples were stored for 20 days and physicochemical, sensory and microbiological analysis of them were carried out in the 1st, 10th and 20th days of storage. According to the results the effects of prebiotic addition on the titratable acidity, whey seperation, viscosity, viable Lactobacillus acidophilus and Bifidobacterium animals subsp. lactis (BB-12) counts, taste and smell, texture and general acceptability scores were found significant (p<0.05), but the effects of prebiotic addition on the pH and colour and appearance scores were found insignificant (p>0.05). The results evaluated from microbiological analysis showed that the prebiotic effects of pomegranate seed and pomegranated peel powders were lower than inulin.
