Abstract:
Çalışmada Ardahan il merkezi ve ilçelerinde bulunan Çeçil (Civil) peyniri satış yerlerinden 40 adet peynir örneği temin edilerek kimyasal, mikrobiyolojik özellikleri ile proteoliz düzeyleri araştırılmıştır. Örneklerin titrasyon asitliği, pH, yağ, kurumadde, kurumaddede yağ, tuz, kurumaddede tuz, protein, kurumaddede protein, toplam azot, suda çözünen azot, olgunlaşma dereceleri, %12 TCA çözünen azot oranı, %5 PTA çözünen azot oranı, kazein azot oranı, proteaz- pepton oranı sırasıyla %0.80±0.19, 5.28±0.22, %4.45±3.18, %43.05±10, %10.02±5.30, %4.94±1.53, %11.48±1.66, %31.68±4.51, %73.99±7.96, %4.97±0.71, %0.48±0.01, %10±2, %0.32±0.02, %0.10±1, %90.37±1.86 ve %0.16±0.01 olarak bulunmuştur. Ayrıca total aerobik mezofilik bakteri (TAMB), maya-küf ve koliform grubu bakteri sayıları sırasıyla 7.36±1.41, 6.86±1.06 ve 1.76±1.16 log kob/g olarak tespit edilmiştir. Çalışma sonucu peynirlerin standart özelliğe sahip olmadığı, hayvansal protein yönünden zengin, süt yağ oranı düşük olmakla birlikte kurumadde tuz oranı yüksek bulunmuştur. Tüm örneklerin az olgunlaşmış olarak satışa sunulduğu ve mikrobiyal açıdan uygun değer aralığında olmadığı tespit edilmiştir. Üretilen Çeçil (Civil) peynirinin daha sağlıklı ve kaliteli olabilmesi için üretim metotlarına standart getirilmesi ve üretim yapılan küçük aile işletmelerinde hijyen sanitasyon eğitimine önem verilmesi gerektiğini göstermektedir.
A total of fourty Çeçil (Civil) cheese samples were collected from markets in Ardahan and it's district and their chemical and microbiological properties and proteolysis levels were investigated titratable acidity, pH, fat, drymatter, fat in drymatter, salt, salt in drymatter, protein, protein in drymatter, total nitrogen, water- soluble nitrogen fraction (WSN), %12 TCA-soluble nitrogen, %5 PTA- soluble nitrogen, casein nitrogen, proteose- pepton nitrogen levels of the cheese samples were found %0.80±0.19, 5.28±0.22, %4.45±3.18, %43.05±10, %10.02±5.30, %4.94±1.53, %11.48±1.66, %31.68±4.51, %73.99±7.96, %4.97±0.71, %0.48±0.01, %10±2, %0.32±0.02, %0.10±1, %90.37±1.86 and %0.16±0.01 respectively. The means of total aerobic mesophilic bacteria (TAMB), coliforms and yeast-moulds in the cheese samples were determined as 7.36±1.41, 6.86±1.06 and 1.76±1.16 log cfu/g, respectively. Results of the study showed us that cheese had no characteristic standard, with high animal protein, low milk fat and salt in dry matter levels. All samples put on the market were immature and has been determined that it is not in the appropriate range of microbial values. In order to be able to produce healthier and better quality of Çeçil (Civil) cheese standardization of production methodsis required and hygiene sanitation education should be given to the small family business.
