Abstract:
Ayran üretiminde sodyum içeriğini azaltma olanaklarının incelendiği bu çalışmanın ilk aşamasında, ayranda tuzluluk algısını etkileyebilecek üretim parametrelerinden pH değeri değiştirilmiş; farklı inkübasyon çıkış pH değerlerinde üretilen ayranlarda asitlik değişiminin fizikokimyasal, mikrobiyolojik özellikler ve tuzlu tat algısı üzerine etkileri belirlenmiştir. Bu amaçla yağsız kurumaddesi %6 ve yağ oranı %1,8'e standardize edilen süt örnekleri 3 farklı inkübasyon çıkış pH değerine (A:4,9, B:4,6 ve C:4,4) inkübe edilmiştir. Elde edilen bulgulara göre ayranlarda asitlik değişiminin tuzlu tat algısı üzerine etkisi istatistiksel anlamda önemli bulunmuştur (p<0.05). Çalışmanın ikinci aşamasında NaCI yerine farklı mineral tuzların (KCI, MgSO4) kullanım olanakları araştırılmıştır. Bu amaçla %6 YKM, %1,5 yağ ve %0,5 tuz içeren 6 farklı ayran ( A (kontrol):NaCl, B:KCl, C:7:3 KCl:NaCl, D:1:1 NaCl:KCl, E:3:7 NaCl:KCl, F:Pansalt (%56 NaCI - %28 KCI - %12 MgSO4 - %2 L-lisin - %1 Silikon Dioksit) üretimi gerçekleştirilerek fizikokimyasal, mikrobiyolojik ve duyusal özellikleri incelenmiştir. Elde edilen bulgulara göre ayran üretiminde NaCI yerine NaCI/KCI'nın 7:3 ve 1:1 karışımları ve Pansalt kullanılarak kabul edilebilir kalitede ayran üretilebileceği belirlenmiştir.
In the first part of this study, where reducing the sodium content of yogurt drinks is investigated, Ph was varied as a factor that could affect salty taste perception in yogurt drinksand the impact of acidity on the physicochemical, microbiological properties and salty taste perception were determined. For this purpose, milk, that was standardized to 6% non-fat dry matter (NFDM), 1,8 % fat and 0,5% salt content was incubated to 3 different pH values (A:4,9, B:4,6 and C: 4,4). Results showed that, impact of acidity on salty taste perception was statistically important (p<0.05). In the second part of the study, the use of various mineral salts (KCI, MgSO4) as NaCl substitude was investigated. For this purpose, 6 different yogurt drink samples having 6 % NFDM, 1,8 % fat and 0,5% salt ( A (control): NaCl, B:KCl, C: 7:3 KCl: NaCl, D: 1:1 NaCl:KCl, E: 3:7 NaCl:KCl, F: Pansalt (%56 NaCI - %28 KCI - %12 MgSO4 - %2 L-lisin - %1 Silicon Dioxide) were produced and their physicochemical, microbiolagical and sensorial properties were investigated. Results showed that use of Pansalt and the mixtures of NaCl:KCl at the ratios of 7:3 and 1:1 produced acceptable yogurt drinks.
