Abstract:
Bu çalışmada, ekmeklik buğday ununa % 10 ve % 20 oranlarda nohut unu katılmasının Siverek tırnaklı ekmeğin besinsel, duyusal ve reolojik kalite özelliklerine etkisi araştırılmıştır. Üretilen ekmeklerde kimyasal, fizikokimyasal, reolojik ve duyusal analizler yapılmıştır. Elde edilen sonuçlara göre, ekmeklik buğday unundaki nohut unu oranının artmasına bağlı olarak unların kimyasal ve fizikokimyasal kalite özelliklerinden gluten, sedimantasyon, düşme sayısı, kül, nem ve karbonhidrat değerlerinde önemli ölçüde azalma görülmüştür (P<0.05). Nohut unu eklenmesi yağ, protein, ham lif ve farinograf değerlerinde önemli ölçüde artış, ekstensograf değerlerinde ise azalış göstermiştir (P<0.05). Nohut unu kullanımı duyusal özelliklerden ekmek yumuşaklığı, kırılganlık, ekmek içi renk üzerinde olumsuz etki göstermiş fakat kabuk rengi, tat ve aromaya karşı etkisi olumlu bulunmuştur. Nohut unu hamurun fermantasyon süresini kısaltmış ve nohut unlu ekmeklerin su absorbsiyonunun ekmeklik buğday ununa göre daha yüksek olduğu bu yüzden nohut unlu ekmeklerin bayatlamayı geciktirdiği tespit edilmiştir.
In this study, effect of addition of 10 and 20 % of chickpea flour to wheat flour on the nutritional, sensory, and rheological properties of Siverek flat bread was researched. Chemical, physico-chemical, rheological and sensory anlysis was performed for produced breads. According to the results obtained, increasing the addition of chickpea flour to wheat flour decreased significantly (P<0.05) the gluten, sedimentation value, falling number, ash, moisture and carbonhydrate contents which are the chemical and physico-chemical qualities of flours. Chickpea flour addition rised in crude fat, protein, fiber and farinograph values, but decreased the extensograph values of flour mixtures significantly (P<0.05). It was showed that using chickpea flour effected negatively on crumb softness, fragility and crumb color but positively on crust color, taste and aroma of bread which are sensory characteristics. Although chickpea flour decreased the fermentation time of dough and water absorption values of chickpea added flour were higher than those of without added chickpea flour. It was determined that chickpea flour added breads retarded the bread stalling due to low moisture content.
