Abstract:
Haşlama sıcaklığı ve süresinin etkisini belirlemek amacıyla, koyun sütü kullanılarak geleneksel yöntemle üretilen Urfa peynirlerine 18 saat kuru tuzlama işlemi uygulanmıştır. Daha sonra peynir örnekleri 70, 80 ve 90°C'de 5 ve 10 dakika haşlama işlemine tabi tutularak toplamda 6 farklı peynir elde edilmiştir. Üretilen peynirler %14 salamurada 90 gün boyunca olgunlaştırılmıştır. Olgunlaşmanın 1., 30., 60. ve 90. günlerinde kimyasal, tekstürel ve mikro yapısal özellikler incelenmiştir. Haşlama sıcaklığı peynirlerin kurumadde de yağ, tuz ve kurumadde de tuz değerlerine P<0.05, yağ sonucuna P<0.01, kurumadde, protein, sertlik, iç yapışkanlık, sakızımsılık, çiğnenebilirlik, sıkılık değerlerine P<0.001, düzeyinde etkili olduğu belirlenmiştir. Haşlama süresi örneklerin protein, yağ, tuz, sakızımsılık, ve sıkılık değerlerine P<0.05, kurumadde ve sertlik sonuçlarına ise P<0.001 seviyesinde etkili olduğu bulunmuştur. Depolama kurumadde de yağ ve pH sonuçlarını P<0.05, kurumadde, protein, titrasyon asitliği, yağ sıkılık değerlerini P<0.001 seviyesinde etkilemiştir. Haşlama sıcaklığı x depolama interaksiyonu tuz (P<0.05), kurumadde de tuz (P<0.01) sertlik, iç yapışkanlık, sıkılık (P<0.001) değerlerine etkili olduğu tespit edilmiştir. Ayrıca haşlama süresi x depolama interaksiyonu kurumadde de tuz değerine etkili olmuştur (P<0.05).
In this work, Urfa cheese was produced from ewe milk with traditional technique. And, dry-salting was done for 18 hours. Then, cheeses were scalded at 70, 80 and 90 °C for 5 or 10 minutes. The cheeses were cooled down to room temperature and then placed into plastic conrainers aseptically. Cheeses were brined-salted at 4 °C for 90 days in 14% (w/v) brine concentration. Chemical, textural and microstructural properties of the 1, 30, 60 and 90 day old cheese were carried out. The scalding temparature affected solids in the fat, salt, dry matter in the salt (P <0.05), fat (P <0.01) and dry matter, protein, hardness, cohesiveness, gumminess, chewiness, and the firmness values of P <0.001 levels. Scalding time changed protein, fat, salt, gumminess, firmness values of P <0.05, solids and hardness of P <0.001levels. The ripening time affected fat in dry matter, pH values (P <0.05), protein, (P <0.01), solids, titratable acidity, fat, salt, solids in the salt, L, a, b, Δ, hardness, cohesiveness, springiness, gumminess, chewiness, fracture, adhesiveness, the stiffness value (P <0.001). The ineraction of scaldin temperature and storage affected salt (P <0.05), salt in dry matter (P <0.01), hardness, cohesiveness, gumminess, chewiness and stiffness (P <0.001) .
