Abstract:
Bu çalışmada ülkemizde dondurma üretiminde yaygın olarak kullanılan salebe alternatif olarak, saleple aynı etken maddeyi (glikomannan) içeren konjak sakızının [E 425 (i)] tek başına ve/veya saleple uygun karışımlarının kullanılabilme imkânları ve konjak sakızının 60 günlük depolama süresince dondurmanın kalite nitelikleri üzerine etkisinin belirlenmesi amaçlanmıştır. Araştırmada iki kontrol (K1: %0.8 yalnızca salep, K2: %0.8 yalnızca konjak sakızı), konjak sakızı ve salebin birlikte (B: %0.2 konjak sakızı ve %0.6 salep, C: %0.4 konjak sakızı ve %0.4 salep), yalnızca konjak sakızının (E: %0.2 konjak sakızı, F: %0.4 konjak sakızı, G: %0.6 konjak sakızı) kullanıldığı 8 deneme grubu oluşturulmuştur. Dondurmaların pH, titrasyon asitliği, kurumadde ve yağ değerleri üzerine stabilizör çeşidi ve oranının etkisi önemsiz (p>0.05) bulunmuştur. Dondurmaların fiziksel özelliklerinden viskozite, hacim artışı, ilk damlama süresi, tamamen erime süresi, % erime oranı özelliklerine, TPA analizlerinden sertlik, iç yapışkanlık,dış yapışkanlık, elastikiyet ve sakızımsılık özelliklerine ve duyusal parametrelerden soğukluk şiddeti, sıkılık, viskozite, pürüzsüzlük, renk ve görünüş, ağız dolgunluğu, tat ve koku ve genel kabul edilebilirlik özelliklerine depolama süresi ile stabilizör çeşidinin etkisi istatistiksel olarak önemli (p<0.01) bulunmuştur. En çok beğenilen dondurmalar konjak sakızı ve salebin birlikte kullanıldığı B ve C örnekleri olmuştur. Sonuç olarak, konjak sakızının saleple birlikte veya tek başına kullanımının dondurma üretiminde salebe alternatif olabileceği saptanmıştır.
In this study, it was aimed to the possibilities of using Konjac gum [E 425 (i)], contained same active ingredient (glucomannan) with sahlep, as an alternative to sahlep, which was used commonly for ice cream production in our country, alone or/and mixture with sahlep and determination of the effects of Konjac gum on the quality characeristics of ice cream for 60 days storage. In the study, eight experiment groups were used which two of them were controls (K1: 0.8% only salep, K2: 0.8% only konjac gum), three of them were the mixture of konjac gum and sahlep (B: 0.2% konjac gum and 0.6% sahlep, C: 0.4% konjak gum and 0.4% sahlep)and three of them were only konjac gum (E: 0.2% konjac gum, F: 0.4% konjac gum, G: 0.6% konjac gum). The effect of stabilizer type was insignificant on the pH, titration acidity, dry matter and fat values (p> 0.05). The effects of stabilizer type and the storage period was found to be statistically significant (p<0.01) on the physical properties of ice cream such as viscosity, overrun, first dripping time, complete melting time, percent melting ratio values, and TPA analyzes of ice cream such as hardness, cohesiveness, adhesiveness, springiness and gumminess, and sensory parameters of ice cream such as coldness, firmness, viscosity, smoothness, color and appearance, mouth coating, odor and taste and general acceptability. The most popular ice creams have been the sample B and C, which were produced by using mixture of konjac gum and sahlep. As a result, it has been determined that konjac gum could be used alone or mixture with sahlep as an alternative to sahlep for production of ice cream.
