Abstract:
Bu çalışmada, çiğ koyun sütünden üretilen ve farklı ambalaj materyallerinde (oğlak derisi ve plastik bidon) olgunlaştırılan geleneksel Muş Tulum peynirinin bileşim ile bazı biyokimyasal ve mikrobiyolojik özellikleri incelenmiş ve gıda güvenliği açısından değerlendirilmiştir. Bu amaçla, Muş ilinde geleneksel Muş Tulum peynirinin üretildiği 3 farklı süt işletmesinden (A, B ve C) 1 hafta aralıklarla toplamda 3 defa peynir örneği alınmıştır. Alınan peynir örnekleri işletme şartlarında peynir ustaları tarafından oğlak derisi (3 kg) ile plastik bidonlara (1 kg) basılmış ve 4 ay süre ile 4-6 °C'de depolanarak olgunlaştırılmıştır. Depolamanın 3. ayında peynir örneklerinin bileşimine, 3. ve 4.aylarında ise örneklerin bazı biyokimyasal ve mikrobiyolojik özellikleri araştırılmıştır. Yapılan istatiksel değerlendirmeler sonucunda, peynir üretiminin gerçekleştiği işletmeler açısından, peynirin bileşim, biyokimyasal ve mikrobiyolojik parametreleri arasında çok önemli; ambalaj materyali bakımından, peynirin KM, yağ, KM'de yağ, protein, kül, tuz, KM'de tuz oranı, pH ve lipoliz düzeyi ile laktik asit bakterileri ve istenmeyen kontaminantlar (Koliform grubu bakteriler, E.coli ve Koagulaz (+) Staphylococcus)'ın sayısı arasında önemli farklılıklar tespit edilmiştir. Başka bir deyişle, peynir üretim prosesleri acısından bir standardizasyonun olmadığı, oğlak derisinde olgunlaştırılan peynirde KM, yağ, protein, kül, tuz ve KM'de tuz değerleri ile Koliform grubu, E.coli ve Koagulaz (+) staphylococcus sayısının daha yüksek, pH ve lipoliz düzeyi değeri ile maya-küf sayısının ise daha düşük olduğu; mikrobiyolojik parametreler bağlamında peynirin hijyenik şartlarda üretilmesi gerektiği, tüketici sağlığı ve gıda güvenliği bakımından Muş Tulum peynirinin en az 4 ay olgunlaştırıldıktan sonra tüketilebileceği sonucuna varılmıştır.
In this study, some biochemical and microbiological properties of traditional Muş Tulum cheese, which is produced from raw sheep milk and ripened in different packaging materials (leather and plastic bottle), were examined and evaluated for food safety. For this purpose, cheese samples were taken 3 times from 3 different cheese plants where traditional tulum cheese produced (A, B and C) in Mus province with 1 week intervals. Cheese samples were stored in leather (3 kg) and plastic bottles ripened for 4 months at 4-6 ° C. Cheese compositions were analysed on the 3 nd mounth of storage and some physicochemical and microbiological properties of the samples were determined at 3 nd and 4 th mounth of the storage. According to statistical evaluations; there were statistically significant difference in cheese composition, biochemical and microbiological parameters with regard to cheese manufactured plants, in addition there were statistically significant difference in ratios of drymatter, fat, fat in dry matter, protein, ash, salt, salt in dry matter, and pH, lipolysis level, lactic acid bacteria count and the other contaminants (Coliform bacteria, E.coli, Coagulase (+) Staphylococcus) as well. In terms of cheese manufacturing processes, the drymatter, fat, protein, ash, salt salt in dry matter content and Coliform bacteria, E.coli, Coagulase (+) Staphylococcus counts were higher in the cheese samples that were ripened in leather; whereas pH, lipolysis level, yeast-fungi counts were lower in the samples ripened in leather. It was determined that Mus Tulum cheese should be produced under high level hygienic conditions and traditional Mus Tulum cheese should be consumed only after 4 mounth ripened period.
