Abstract:
Bu çalışmanın amacı, meyveli yoğurdun kalite kriterlerini etkilemeden,yoğurt üretiminde şeker kullanımını azaltmak, probiyotik mikroorganizmaların gelişimini teşvik etmek ve fonksiyonel bir ürün elde etmek amacıyla prebiyotik lifli stevia®?nın kullanım olanaklarını araştırmaktır. Bunun için, sade, %10 şeker, stevia (%2.5, %2, %1.5), stevia + şeker (%5 + %1.25, %5 + %1; %5 + %0.75)ilaveli çilek aromalı probiyotik yoğurt üretilmiştir. Depolamanın 1., 7., 14. ve 21. günlerinde örneklerde bazı kimyasal, fiziksel, mikrobiyolojik ve duyusal özellikler incelenmiştir. Depolama sırasında yoğurt örneklerin kuru madde, serum ayrılması, viskozite, tat-aroma, kıvam değerlerinde değişim gözlemlenmemiştir. Örneklerin pH değerleri ilk hafta azalırken daha sonra sabit kalmıştır. Genel olarak S. thermophilus, L. bulgaricus, L. acidophilus ve B. bifidum sayıları depolama sırasında azalmıştır. %10 şeker ilaveli kontrol örneğinin kuru madde, S.thermophilus, tat-aroma, genel kabul edilebilirlik değerleri depolamanın bitiminde stevialı örneklerden yüksek olmasına karşın titrasyon asitliği, L. bulgaricus, L. acidophilus, B. animalis lactis değerleri kıyaslamasında ise depolama sonunda stevialı örneklerden düşük olduğu tespit edilmiştir. Yapılan duyusal değerlendirmede, stevia miktarının artışıyla ters orantılı olarak yoğurtların almış olduğu puanların düştüğü belirlenmiştir. Panelistler stevia ilave edilen örneklerden, G örneğinin (% 5 şeker + %0.75 stevia) kontrol örneğine ( % 10 şeker ) en yakın örnek olduğunu belirtmişlerdir. The purpose of this study was to fruit yogurt without affecting the quality criteria, reduce the amount of sugar in the production of yogurt, to promote the development of probiotic microorganisms and Stevia ® prebiotic fiber in order to obtain a functional product was to investigate the possibilities of using the production yoghurt. In this study, some quality characteristics of probiotic yoğurt, produced by the addition of stevia and sugar in different proportions (2.5%, 2% and 1.5% stevia; 5% sugar + 1.25% stevia; 5% sugar + 1% stevia; 5% sugar + 0.75% stevia) tobovine milk, was investigated. Eight different types of yogurt samples were produced and stored at for 21 days. Some physical, chemical, microbiological and sensory characteristics of these samples were determined at days 1., 7.,14. and 21. It was determined that addition of stevia increased the apparent viscosity values, but it decreased the texture and whey separation values. Stevia also decreased the chemical and microbiological properties of yogurts. In the sensory analysis, it was observed that as stevia proportions in yoğurt increased, the sensory scores of yogurt decreased and the panelists declared that the yogurt sample having 5% sugar and 0.75% stevia which was coded as G, was the closest sample to control sample (10% sugar).
